This was a request from my husband. He wanted to gift something to one of his colleagues and thought baking a sweet potato pie would be a good gift. I wanted something easy to bake, that did not require a lot of time and ingredients. We bought some sweet potato’s from the grocery store. Sometimes the best dishes are the simplest and the most inexpensive. Here goes the recipe.
2 large sweet potato’s – Boiled and soft. Remove skin and mash with a fork.
Condensed Milk – I can ( I was lazy but you could add honey or agave with some whole milk)
I cup of milk
Cinnamon Powder – 1/2 tea spoon
Cardamom Powder – 1/2 tea spoon
Grahams Cracker Base – Available at the dollar store
3 eggs medium
Turn on over to 350 degrees ( I have a small oster oven that works like a charm)
Mix the above ingredients in a blender with the exception of the graham cracker. (Lol! what would happen if you actually did blend the base)
Add the mix to the the graham cracker base and let it bake
Voila and the pie is ready.
