Sweet Potato Sesame Seed Brussel Sprouts

The holidays have been a damper on our diets. This is a healthy lunch to eat and is easy to make.

Ingredients:
1 Medium sweet potato – cut evenly into dime sized pieces ( it is optional to leave the skin on)
1/2 cup Sesame seeds
2 cups Brussel Sprouts (frozen)
1/2 medium sized onion – cut finely
1 Tspn oil for the pot
2 Tspn oil for the oven roasting or more
Salt and pepper to taste.

Method:
1. Roast the sweet potato, onions and the brussel sprouts in the oven at 200 degrees for 15-20 minutes until they look roasted. Make sure you add sufficient oil to the pan.
2. Add the 1/2 tspn of oil and roast the sesame seeds in a pot for 5-10 minutes.
3. Combine the oven roasted sweet potato, onions and brussel sprouts to the sesame seeds in the pot and cook on top of stove. Add the salt and pepper to your taste. Cook together for 5 minutes.

Serves 1. Eat as is.

  1. I made a similar recipe yesterday but didn’t take any photos. I also roasted cut up Brussels sprouts, home grown peeled sunchokes, white peeled onion wedges, garlic cloves unpeeled & peeled carrots in pieces, seasoned them with black pepper, pink salt & curry powder, drizzled with a fruity olive oil & roasdted into the hot oven for 30 minutes on 200°C.
    Divine too! I served my dinner with sweet potato mash & each an organic chicken fillet. Divine too! xxx
