I love eating cup cakes to make up for my daily intake of carbs. However, going to the cafeteria and grabbing a cup cake filled with Sugar is not optimal to anyone trying to keep fit. My husband bought a bag of Stevia from the store the other day and I saw a recipe at the back of the bag, that I thought would a. Satisfy my urge for carbs and b. be a healthier option for my 10 am urge for carbs.
Here goes the recipe. This is slightly modified from Stevia’s recipe:
2 1/2 cups flour
1 TBS Coco powder unsweetened
1 tsp baking powder
1 tsp baking soda
1 tsp salt
3 cups stevia or 2 cups stevia and 1 cup apple pulp
1 1/4 cup butter milk
1 tbs vanilla extract
1/3 cup egg whites
1 tsp vinegar
Mix all the ingredients above
Add the batter to cup cake holders
Bake at 350 degrees for 30 minutes or until you put a knife in the cupcakes and the knife comes out dry.
Serving 20 medium sized cup cakes.
